Acacia Honey (500g)
Acacia Honey comes from the flowers of what we Indians know as the Babool tree. Right around the end of February, we set up our bee boxes on the banks of an offshoot of the Chambal river, where Acacia trees are known to grow.
Then, we wait patiently for the ambient temperature to reach 38-40 Celcius as that's the temperature at which the nectar starts to flow.
Over the next few weeks, the bees feed on this nectar, turning it into honey which is now in this jar.
This honey has a creamy texture and light floral notes and works really well in beverages, but don't let that stop you from eating spoonfuls straight from the jar!
